Diego Varela
Executive Director, Food and Nutrition / Regulatory Advisory Council
Diego brings over 15 years of experience in consulting and project management within the national and international public sector, specializing in food safety, quality, trade, innovation, and regulation. Diego holds a Master’s degree in Business Administration and a Master’s degree in Technological Management with an emphasis in Biotechnology.
Beginning his career as a consultant for the Food and Agriculture Organization (FAO) at the Regional Office for Latin America and the Caribbean, Diego focused on food safety, fisheries, and aquaculture. He later served at the Chilean Cooperation Agency for Development (AGCID) under the Chilean Ministry of Foreign Affairs, contributing to the design and implementation of cooperation projects for the Caribbean Subregion. In 2022, he became Director of the Chilean Food Safety and Quality Agency, leading the organization to strengthen the national food control system. He has also taken part in bilateral and multilateral trade negotiations, promoting alignment with international regulations and fostering equitable trade frameworks.
From 2018 to 2020, he served as Chairperson of the Codex Alimentarius Committee for Latin America and the Caribbean and from 2021 to 2024 as Vice Chairperson of the Codex Alimentarius Commission.
Diego lives in Santiago, Chile with his wife, daughter, and son, and spends as much time as possible kitesurfing.
